Successful local eating starts with seeing what’s at the market or in your CSA box then finding a recipe for it. We have to let go of the tendency to pick a recipe and buy according to that. Keep a library of cookbooks or just find recipes online when you have a pile of local meat and veggies waiting to be eaten.

I want to eat local but I don’t know how. I live in Anchorage, AK and I can’t eat seafood. There are great root veggies during the 4 months of summer but that is about it. Any suggestions?

Great question, Amanda. CSA means Community Supported Agriculture. Some farmers offer this program where you pay a subscription fee for a “share” at the beginning of the season and you’ll receive a weekly package of veggies from that farm throughout the harvesting season. Typically you don’t pick out the veggies - it’s a surprise, and the fun part is being adventurous and creative by figuring out how to eat them! Hope that helps

I wanted to ask the same thing as Amanda, what is a CSA box. But also, I wanted to know what do you do if you live in the desert. We don’t have a locals market here.
